I would like to root my HTC One M7 Dual sim...can anyone please give me an "idiot's guide" / "rooting for dummies" approach to accomplish this ...?

That's probably the best tutorial. Be sure to back up all of your important files before you proceed!
And obviously don't go through the "install ClockworkMod/TWRP recovery" steps at the end of the article if you don't want this.
